A couple of days ago I saw a video of some darling genius human making one of these, so Breadless Cucumber Sandwiches are by no means my idea. If you want to limit the amount of gluten in your diet, eliminating wheat is obviously the way to go. The problem with that is: sandwiches are so much fun! They are so easy to just grab and shove in your face when you’re on the go. Dieting can be a sheer travesty when you can’t have sandwiches. 

Eliminating bread can be a very good thing because they don’t sprout the wheat like they used to. In the days of big food and mass production, they began skipping a very important step in bread making thinking no one would notice the corners they cut: sprouting the grains. Sprouting the grain makes it easier to digest. You can still buy sprouted grain bread if you don’t mind buying frozen bread and keeping it frozen until you want to use it, but it still has calories and gluten, which many people have become sensitive to as of late.

I saw a meme stating “Humans have been eating bread for thousands of years and all of a sudden everyone is allergic to gluten!” Well yeah, thousands of years ago they were sprouting their grains, and they weren’t genetically modifying their crops to have extra gluten to withstand being doused with glyphosate.

Go buy a USDA certified organic cucumber and now you can make a decent sandwich without munching on chemicals! If you want to still incorporate a gluten-free carb, wash this sandwich down with a cold glass of Karbolyn—it has zero sugars to boot. 

You can make any kind of sandwich you want, here’s just an idea of the things you can put on your breadless cucumber sandwiches. The possibilities are endless! 

Removing the skin makes it easier to bite into but a little wetter to hold. For those of you with small mouths, you may want to eat them in two separate pieces like a bruschetta rather than trying to fit the whole thing in your mouth…I kinda half failed—please don’t laugh! Then again, I would have enjoyed watching me fumble! 

INGREDIENTS:

  • 1 cucumber sliced long-ways down the middle 
  • ½ slice of tomato 
  • 4 oz. chicken breast 
  • 1 piece of low-fat Swiss cheese 
  • ½ medium avocado 
  • Salt and pepper to taste 

DIRECTIONS: 

Wash the cucumber and peel if desired. Slice long-ways down the middle, and then take a spoon and scoop out the seeds. Slice everything long and thin, and then add the salt and pepper to taste and Voila! You have a sandwich!
